Budget friendly supper combining 2 favourites in one dish

Ingredients
- 4 baking potatoes
- olive oil
- ½ red onion
- finely chopped 1 garlic clove
- crushed 60g pepperoni slices, torn
- 400g can chopped tomatoes
- 100g grated mozzarella (or cheese of your choice)
- dried/fresh herbs i.e. oregano, basil (if desired)
Method
- Heat oven to 180 degrees, prick potatoes several times with a fork and put directly on oven shelf for 1-1 ½ hours until they feel soft
- While the potatoes cook, heat 1 tablespoon of oil in a small pan, cook the onions for 5 minutes to soften
- Stir in the garlic and pepperoni, cook for 1-2 minutes then add the tomatoes
- Bring to the boil and simmer for 5 minutes or until thickened
- Season with salt and pepper and stir in your herbs
- Take potatoes out of the oven, cut in half then spoon over the tomato mixture, top with cheese then sprinkle any herbs
- Place under the grill or back in the oven until cheese is melted and golden, remove and serve with salad
