Budget friendly supper combining 2 favourites in one dish

Ingredients

  • 4 baking potatoes
  • olive oil
  • ½ red onion
  • finely chopped 1 garlic clove
  • crushed 60g pepperoni slices, torn
  • 400g can chopped tomatoes
  • 100g grated mozzarella (or cheese of your choice)
  • dried/fresh herbs i.e. oregano, basil (if desired)

Method

  1. Heat oven to 180 degrees, prick potatoes several times with a fork and put directly on oven shelf for 1-1 ½ hours until they feel soft
  2. While the potatoes cook, heat 1 tablespoon of oil in a small pan, cook the onions for 5 minutes to soften
  3. Stir in the garlic and pepperoni, cook for 1-2 minutes then add the tomatoes
  4. Bring to the boil and simmer for 5 minutes or until thickened
  5. Season with salt and pepper and stir in your herbs
  6. Take potatoes out of the oven, cut in half then spoon over the tomato mixture, top with cheese then sprinkle any herbs
  7. Place under the grill or back in the oven until cheese is melted and golden, remove and serve with salad
