Mild Chilli Con Carne and Rice
Our Chilli Con Carne recipe is delicious but mild. If you prefer it to be spicier, simply add more chilli powder or even add some fresh chilli! This is also a great recipe to batch cook and freeze for future meals.
Ingredients
- 175g Mince
- 100g Rice
- 2/3 tin Kidney beans
- Half a Tinned tomato
- 1 Onion
- 40g Mushrooms
- 25g cheese
- Suggested Seasonings: chilli and garlic mix, paprika, salt, pepper
Method
- Roughly chop one onion and 40g mushrooms.
- In a pan, add a small amount of oil, 175g mince, the onion, and the mushrooms.
- Fry this on low until the mince has browned and the onions are soft. This is usually after 7-10 minutes.
- Whilst this is cooking, add a pan of water onto boil for the rice. Once it is boiling, add 100g rice and reduce the heat to medium/low for a simmer instead of a boil. Stir occasionally.
- Once the mince is browned, add half a tin of chopped tomatoes, 2/3 tin of drained kidney beans, stir well.
- Also add seasonings into the sauce. Such as salt, black pepper, a heaped teaspoon of garlic and chilli mix, and a flat teaspoon of paprika.
- Simmer this on a medium/low heat for 10 minutes, stirring occasionally.
- Whilst this is cooking, grate 25g cheese.
- The rice should now have soaked up all the water and be fluffy. Remove from the heat and mix well.
- Once the sauce has thickened and is piping hot, plate up with your rice and sprinkle the cheese on top. Eat and enjoy!
