Chicken Fajita Style Wraps
Fajitas are bursting with flavour and are quick and easy to make. This recipe makes two wraps for one person, but if you are cooking for more people you could add a side of wedges, or increase the quantities!
Ingredients
- 130g Chicken
- 2 Tortilla wraps
- 1/2 Red pepper
- ½ tinned tomato (200g)
- 1 Onion
- Suggested seasoning- Salt, pepper, paprika- Or buy a fajita seasoning pack.
Method
- Roughly chop the onion and half a red pepper
- Cut the chicken thighs into equal strips.
- To a pan, add the onion, red pepper, and chicken. Then season well with a pinch of black pepper and salt, and a level teaspoon of paprika.
- Fry this on a medium to low heat for 10 minutes, stirring occasionally.
- Now add half a tin of chopped tomatoes to the pan and cook for a further 5 minutes.
- Once the chicken is piping hot and thoroughly cooked, add the mixture onto the centre of both your tortilla wraps.
- You can now add any desired extras such as soured cream.
- Fold the bottom of the wrap up onto the chicken mixture, then fold both sides in to form a wrap. Eat and enjoy!
