DIY Nachos
This Mexican inspired dish can be made as a snack to share for a movie night, or a meal on its own for one. You could even add your leftovers to them, such as bolognese or chilli con carne!
Ingredients
- 75g Mince
- Half tinned tomato
- 75g Cheese
- 3 Tortilla wraps
- 30g Sweetcorn
- 1/2 Red pepper
Method
- Preheat the oven to 180 or gas mark 4.
- Roughly chop one onion and half a red pepper
- In a frying pan, add a small amount of oil, 75g mince, the chopped onion and red pepper, and 30g sweetcorn.
- Whilst this is cooking, cut 3 Tortilla wraps into triangles.
- Lay these on a tray and place in the oven for 5 minutes each side.
- Once the mince is browned and the vegetables are soft, add 1/2 tin of chopped tomatoes and season with a sprinkling of salt, black pepper, and chilli. Cook for a further 5 minutes then remove from the heat.
- Grate 75g cheese.
- Now assemble your nachos by placing a layer of toasted tortilla triangles, some mince mix, and some cheese, until you have used all of the ingredients.
- Place back in the oven for 5-7 minutes.
- Eat and enjoy!
- These could be paired with soured cream and guacamole!
