Tortilla Pizza and Wedges

Tortilla Pizzas are a great fakeaway to get children involved with. They’re super simple, quick and easy and can also make a good lunch option! You can use any toppings you prefer, or already have at home.

Ingredients

  • 500g potatoes,
  • 5 tortilla wraps,
  • 200g cheese,
  • 8 tablespoons of tomato puree,
  • 120g pack of pepperoni.

Method

  1. Preheat the oven to 200 degrees/ gas mark 6.
  2. Boil a medium pan of water.
  3. Chop 500g potatoes into wedges. Leave the skin on for extra crisp.
  4. Boil the wedges until slightly tender, then drain the water.
  5. Lay the potatoes on a tray, drizzle a small amount of oil and season to your taste and cook in the oven for 25 minutes, turning halfway.
  6. Grate 200g cheese.
  7. Once cooked remove from the wedges from the oven and put to the side until the pizzas are ready.
  8. Spread roughly two tablespoons of tomato paste across a tortilla wrap.
  9. Sprinkle 50g of cheese onto your tortilla pizza base.
  10. Add a quarter of a pack of pepperoni onto the tortilla pizza.
  11. Repeat a further 3 times to make enough for the family.
  12. Individually, cook under the grill for roughly 5 minutes, or until golden.
  13. Once the pizza is hot, melted, and golden, cut it up and enjoy with the wedges!
