- 500g potatoes,
- 5 tortilla wraps,
- 200g cheese,
- 8 tablespoons of tomato puree,
- 120g pack of pepperoni.
Method
- Preheat the oven to 200 degrees/ gas mark 6.
- Boil a medium pan of water.
- Chop 500g potatoes into wedges. Leave the skin on for extra crisp.
- Boil the wedges until slightly tender, then drain the water.
- Lay the potatoes on a tray, drizzle a small amount of oil and season to your taste and cook in the oven for 25 minutes, turning halfway.
- Grate 200g cheese.
- Once cooked remove from the wedges from the oven and put to the side until the pizzas are ready.
- Spread roughly two tablespoons of tomato paste across a tortilla wrap.
- Sprinkle 50g of cheese onto your tortilla pizza base.
- Add a quarter of a pack of pepperoni onto the tortilla pizza.
- Repeat a further 3 times to make enough for the family.
- Individually, cook under the grill for roughly 5 minutes, or until golden.
- Once the pizza is hot, melted, and golden, cut it up and enjoy with the wedges!
