Creamy Vegetable Pasta
This vegetarian dish is a tasty, low cost way to fill the family. To prevent food waste and make a larger amount, add any vegetables you have at home that need eating!
Ingredients
- 250g pasta,
- 150g peas,
- 1 small tin of sweetcorn (roughly 160g)
- 1 large carrot,
- 500 ml milk,
- 50g butter,
- 4 tablespoons of plain flour,
- 150g cheddar cheese.
Method
- Place a medium size pan, ¾ full of water, on to boil.
- When the water starts boiling, add 250g (half a packet) of pasta and leave to cook for around 10-15 minutes, or until soft.
- Whilst the pasta is cooking, grate 150g cheese, this is around one large handful.
- Also grate the large carrot.
- In a saucepan add 500ml of milk, 4 tablespoons of plain flour and 50g butter onto a medium heat.
- Whisk this quickly for around 3-4 minutes and then add 100g of the grated cheese. Alternatively, you can use a jar of pre made cheese sauce.
- Once this has melted, turn the heat down to low and add the grated carrot, 150g peas, 160g sweetcorn to the pan. Stir frequently and remove from the heat after 5 minutes.
- When the pasta is cooked and soft, drain the pasta water.
- Mix the sauce and pasta, serve, and enjoy!
