Beef Enchiladas
Our Mexican inspired Beef Enchiladas are a tasty but quick and easy family meal. They can even be made over with leftover chilli con carne or bolognese!
Ingredients
- 1 teaspoon of oil,
- 1 onion,
- 1 tin of tomatoes,
- 1 tablespoon of tomato puree,
- 500g mince,
- 6 Tortillas,
- 100g Cheese,
- 1 Red pepper,
- Seasoning: salt, pepper, mixed herbs, paprika and garlic
Method
- Pre heat the oven to 200 degrees/ gas mark 6.
- Chop one onion finely and and add to a frying pan on a medium heat, with a teaspoon of oil.
- Whilst the onions fry, chop one red pepper into strips and grate 100g of cheese.
- Add 500g mince in the pan and break it up so it can cook evenly. Also add the chopped red pepper. Mix occasionally until the mince is browned.
- Once the mince is browned and cooked, add the tinned tomatoes, tomato puree and seasonings. Mix this to combine with the contents of the pan.
- Leave this to simmer on a low heat for 5-10 minutes. Stirring occasionally
- In two separate baking dishes, lay out the 6 tortillas (3 in each).
- Remove the mince mix from the heat. Add roughly two tablespoons of the mix onto the middle of each of the tortillas.
- Roll the tortillas over the mix so they have formed wraps, enclosing the mixture. Now add the remaining mix over the top.
- Add 50g grated cheese to each dish.
- Place both dishes into the oven for 15 minutes, or until the wraps and cheese are golden.
- Serve the enchiladas and enjoy!
