Mild Chilli Con Carne and Rice

Our Chilli Con Carne recipe is delicious but mild. If you prefer it to be spicier, simply add more chilli powder or even add some fresh chilli! This is also a great recipe to batch cook and freeze for future meals.

Ingredients

  • 1 teaspoon of oil,
  • 175g Mince,
  • 100g Rice,
  • Half tin of kidney beans,
  • Half a tin of tomatoes,
  • Half an onion,
  • 40g Mushrooms (around 4 closed cup mushrooms),
  • 25g cheese,
  • Suggested Seasonings: chili flakes, garlic, paprika, salt, pepper

 

Method

  1. Roughly chop one onion and 40g mushrooms.
  2. In a frying pan, add a teaspoon of oil, 175g mince, the onion, and the mushrooms. Make sure to break the mince up.
  3. Fry this on low until the mince has browned and the onions are soft. This is usually after 7-10 minutes.
  4. Place a saucepan on a medium heat on to boil with 300ml water. Once it is boiling reduce to a lower heat and add 100g rice. Leave this to cook.
  5. Once the mince is browned, add half a tin of chopped tomatoes, half a tin of drained kidney beans. Stir well.
  6. Also add seasonings into the sauce. Such as salt, pepper, chili, garlic and paprika.
  7. Simmer this on a medium/low heat for 10 minutes, stirring occasionally.
  8. Whilst this is cooking, grate 25g cheese.
  9. The rice should now have soaked up all the water and be fluffy. Remove from the heat and mix well.
  10. Once the sauce has thickened and is piping hot, plate up with your rice and sprinkle the cheese on top. Eat and enjoy!
