One Pot Chicken and Vegetable Soup
This chicken soup recipe is hearty and great for you. It requires minimal preparation or mess, making it easy to cook. It is also great with some bread and butter!
Ingredients
- 130g Chicken
- 40g Carrots
- 1 Potato
- 1 onion
- 1 vegetable stock cube with 450ml water
- Suggested seasoning- salt and pepper
Method
- Roughly peel and chop an onion, 40g carrots and one baking potato. Try to keep the carrot and potato similar sizes so they cook equally.
- Add a pan of 450ml water on to boil.
- Remove the skin from the chicken thighs.
- Once boiling, turn the heat onto low. Mix in one stock cube until dissolved, and season with a sprinkle of salt and black pepper.
- Add in your chopped onion, carrot, potato, and the chicken.
- Let this simmer on a low heat for 30 minutes, stirring occasionally.
- Once the chicken is falling apart and thoroughly cooked, the soup is ready to eat.
